Kale, also known as spring cabbage or curly kale, is the winter vegetable par excellence. We explain step by step how you can prepare kale and present delicious recipes.
Prepare kale: The ingredients 
  • 1 kg fresh kale 
  • 2 onions 
  • 500 ml vegetable broth 
  • 2 tablespoons clarified butter 
  • pepper, salt 
  • sugar (optional) 
Cooking kale: step by step 
  • First, you need to pull the leaves off the stalk, wash the kale, and cut it into small pieces.
  • Then you should blanch it for about two minutes, then rinse it with cold water and drain it. 
  • Peel and dice the onion. 
  • Heat the lard in a pot and sauté the onions in it. 
  • Add the kale, pour in the broth, and bring to a boil. 
  • Let the vegetables cook for 1 ½ hour, stirring occasionally and adding water if necessary to prevent the kale from burning. 
  • Finally, season to taste with pepper and salt. If the kale tastes bitter, you can add sugar to it. 
  • Very tasty with potatoes, Kasseler or Pinkel, a smoked sausage from northern Germany. 

Preparing kale: Recipe ideas

Kale: commodity knowledge 
When buying, make sure the kale is fresh and has no yellow or wilted leaves. If you're not processing it right away, it's best to store it in the refrigerator. 
The kale season lasts from September to March, but you can easily freeze the vegetable and eat it all year round. To do this, you should wash the kale thoroughly, blanch it briefly and chop it into small pieces before storing it in portions in the freezer. 

Kale is also nutritious; it is high in vitamins and minerals and is low in calories and fat, with only 49 calories and one gram of fat per 100 grams. So there's nothing stopping you from feasting!
