Simple cooking: Full enjoyment with little effort

 It doesn't take much effort for great pleasure! In the book "The 70 simplest healthy recipes" you will learn how easy cooking can be.

Preparation

  •  Heat the coconut oil in a large pot over medium heat. Add sweet potatoes and onions and sauté for 2 minutes. Sprinkle with curry powder and chili flakes, mix well and pour in the vegetable broth. Season with salt put the lid on and simmer for 12 minutes.
  •  Meanwhile, for the topping, whip the cream with salt and curry powder until creamy and firm and chill.
  •  Blend the soup in a stand mixer with the "hot food" function until smooth. Alternatively, puree with a hand blender until smooth.
  •  Pour the sweet potato soup into four deep plates and top each with a large spoonful of curry cream. Garnish with cilantro if desired and serve.
