Preparation
 For the wafer batter, first, separate the eggs and set the whites aside.
 Cream butter, sugar, vanilla sugar, and egg yolks with a hand mixer.
 Mix flour and baking powder. If you want to avoid lumps, sift the mixture again.
 Warm the milk slightly and fold into the egg-sugar mixture together with the baking powder and flour mixture.
 Beat the egg whites until stiff and fold into the mixture. It is best to use a whisk for this.
 Preheat the waffle iron and brush with oil.
 Put 2-3 tablespoons of waffle batter per waffle on the iron and bake the waffles for 2-3 minutes.

And then you are ready to start: It's best to pour the waffle batter directly into the center of the waffle iron - the batter will spread all by itself when you close it.
Now you have to wait and be patient. If you open the waffle iron too early, the waffles can quickly tear.   
What do you need to know about waffle batter?
There are numerous recipes for a delicious waffle batter, which can be easily modified as desired. In general, however, you should pay attention to a few points in the basic recipe to be able to enjoy a successful dough at the end:

Do not skimp on the butter! Butter makes the baked waffles later nice and juicy and acts as a flavor carrier. If, on the other hand, too little butter is added, the waffle can quickly become rubbery. Also, the fat content of the butter contributes to a greasy film on the waffle iron during baking, so burning is prevented.
It's worth sifting the dry ingredients. This prevents lumps in the waffle batter.
Fluffy waffles are made by adding eggs and baking powder. If you like particularly fluffy waffles, separate the eggs: The egg yolk is mixed with butter and sugar at the beginning. The whipped egg whites, on the other hand, are folded in at the end. The beaten egg whites add air in the form of small bubbles to the waffle batter. This air expands during baking and makes the waffle even fluffier.
Before baking, the waffle batter should be left to rest briefly. This is the only way for the gluten in the flour to work and form a stable bond with the other ingredients.
For crispy waffles do not use milk in the basic recipe, but seltzer water.
How can you refine the waffle batter? 
Once a basic batter is made, it can be flavored with individual ingredients as desired. For example, hail sugar or coconut flakes can be added. Rum flavoring and fruit pieces also make excellent waffle batter. And if you want to give the waffles a delicious chocolate note, simply add cocoa powder and chopped chocolate.

Of course, nut pieces can also be added: Slivered almonds and chopped hazelnuts taste great in the batter. It's best to make a little more dough right at the beginning and divide it into several bowls. This way, more ingredients can be added in portions - and nothing stands in the way of great feasting.

Vegan waffle batter 
Waffle batter can also be made without animal ingredients. To do this, you simply do without eggs and milk. Instead of eggs, you use baking powder, and the milk is replaced by plant milk. Soy milk is a good choice here. Even the butter is not mandatory: oil, vegetable margarine, or vegan butter can be used for vegan waffles.

Gluten-free waffle batter
Those who suffer from gluten intolerance or celiac disease must replace the wheat flour in the waffle batter with another ingredient. For this purpose, gluten-free flour made from a mixture of cornflour, corn starch, and locust bean gum can be found directly in stores.
