Prepare classic pumpkin soup

Ingredients for the pumpkin soup:

800 g Hokkaido

600 g carrots (peeled)

1 onion

5 cm ginger

2 tablespoons butter

1 l vegetable broth

500 ml coconut milk (from the can)

Juice of one lemon

Salt

Pepper

Sunflower seeds (to taste)

Coriander (to taste)

Preparation of the pumpkin soup:

Peel and chop vegetables, ginger, and onion and fry in butter.

Pour in broth and simmer for about 20 minutes until everything has softened nicely.

Finely puree the fruit flesh, stir in coconut milk and season to taste with spices and lemon juice.

Warm the pumpkin soup again and garnish with the coriander and sunflower seeds.

The bright orange Hokkaido pumpkin, for example, makes pumpkin soup especially easy and quick to prepare: it can be used together with the bowl.
